Ingredients
1 The Best Dressed Chicken whole bird
2 oranges, juiced
2 limes, juiced
1 lemon, juiced
1 tsp soy sauce
¼ cup oyster sauce
1 tsp oregano
1 ½ tsp salt
1 ½ tsp pepper
4 garlic cloves, minced
4 sprigs of thyme
2 sage leaves
2 bay leaves
¼ cup olive oil
2 tbsp parsley
Instructions
- Pre-heat oven to 375°F.
- Using a sharp knife or shears, with the breast side down, cut and remove the backbone from the chicken.
- Flip the chicken over once the backbone has been removed and press down to break the breastbone and flatten the chicken.
- Rub the chicken with the rest of the ingredients and bake for about an hour.
- Every 15 minutes, baste with the pan juice.
- Serve with rice.
